Hairy Bikers Poached Eggs

Hairy Bikers poached eggs in Chicken & Egg get a 20-second dip in boiling vinegared water, still in the shell, before they’re cracked. That Chicken & Egg method makes 1 egg in about 10 minutes by my estimate, at roughly 70 calories for a medium one.

The shell dip is “our special tip” in Meat Feasts, since Si and Dave “find that this helps the eggs keep their shape nicely”. Yet the Chicken & Egg perfect poached egg skips the cup and whirlpool used in Meat Feasts, so it’s cracked straight in.

Dropping the heat matters next, because the egg is cracked into water that’s barely simmering, not boiling. Then 3 minutes is the time, and once it’s cooked the egg will rise to the surface.

Description

Vinegar goes into a half-full pan of water, and once it boils the whole egg is lowered in for exactly 20 seconds, then lifted out. Next the heat comes down, the egg is cracked into the pan and cooked for 3 minutes before draining on kitchen paper.

    1. Boil the water: Half fill a saucepan with water, add the vinegar and bring it to the boil.
    2. Dip the egg: Carefully lower the egg, still in its shell, into the water and leave it for exactly 20 seconds. Then lift it out.
    3. Lower the heat: Turn the heat down so the water is barely simmering.

    FAQs

Where does the 30 seconds come from?

In Chicken & Egg, the shell dip is exactly 20 seconds, not 30. But for their eggs Benedict in the same book, cooked eggs go into a frying pan of boiling water for 30 seconds to warm through.

A 2026 TikTok called Hairy Biker Poached Eggs poaches for 2 minutes, then adds 30 seconds more. That timing doesn’t match any of their books I’ve checked, so I’d stick to their 20-second dip.

How is the Meat Feasts method different?

In their Meat Feasts frisée aux lardons, salt and white wine vinegar go into boiling water, which then drops to a gentle simmer. Then each egg is broken into a cup and dropped into a whirlpool stirred in the middle of the pan, for 3 minutes.

Ragged edges are trimmed if needed, then each egg waits in cold water while the rest of the 4 are poached. Then they go back in the pan for 30 seconds to heat through. And their optional shell dip comes before the salt and vinegar go in, so that water is plain.

How long do you poach eggs for eggs Benedict?

For their eggs Benedict, they poach the eggs for just 2½ minutes instead of 3. And my guess is that the shorter time allows for the 30-second reheat, though they don’t say so. Then hollandaise goes over them on toasted muffins with ham, or with smoked salmon for eggs Royale.

A 2020 video on the Hairy Bikers Kitchenware Facebook page covers poached eggs, but I’ve only seen Google’s summary of it. That summary mentions swirling, a tablespoon of vinegar and 4 minutes, so I’d treat 3 minutes as their written timing.

Do you need vinegar, and which eggs work best?

Every Hairy Bikers poaching method in their books uses vinegar, with 1 teaspoon of white wine vinegar for one egg in Chicken & Egg. And in Meat Feasts, Si and Dave say to use really fresh, preferably free-range eggs for poaching.

The BBC poached eggs recipe that ranks here isn’t in the list of their BBC recipes I’ve checked. And it suggests a sieve as another trick, which drains the watery white, so I’d use one method or the other.

What can you serve them with?

In Chicken & Egg, their Turkish eggs use the same 20-second method, set on garlicky yoghurt with chilli butter, parsley and mint. Or for a weekend fry-up, sit one on their crisp-edged corned beef hash in place of the usual fried eggs.

If you’d rather cook the eggs in a sauce, their Chicken & Egg shakshuka sets them into peppers and onions. And for a bigger brunch, their British Classics kedgeree pairs smoked haddock rice with quartered boiled eggs.
