  1. Soften the leeks: Heat 2 tsp of sunflower oil in a non-stick frying pan over a low heat. Add the sliced leeks and cook gently for 3 minutes until softened. Tip them onto a plate and leave to cool for 5 minutes.
  2. Mix the burger filling: In a large bowl, combine the minced turkey, cooled leeks, grated courgette, lemon zest, salt and pepper. Mix everything together by hand until just combined.
  3. Shape the patties: Divide the mixture into 8 equal portions and flatten each one into a burger shape about 2cm thick. Press a small indent into the centre with your thumb to stop the burgers puffing up.
  4. Bake or pan-fry: To bake, preheat the oven to 220°C (200°C Fan / Gas Mark 7). Brush a baking tray with the remaining oil and bake the patties for 5 minutes each side. To pan-fry, heat the remaining oil in a non-stick pan over a medium-high heat and cook for 5 minutes each side until golden.
