How To Make Healthy Fish Pie

  1. Blanch the broccoli: Bring a large pan of water to the boil and cook the broccoli florets for 4 minutes. Drain well and set aside.
  2. Boil the potatoes: Place the potato chunks in a large saucepan, cover with cold water, and boil for 18–20 minutes until tender. Meanwhile, melt the butter in a frying pan and cook the leeks for 5 minutes until soft.
  3. Make the sauce: Pour the milk into a saucepan and bring to a gentle simmer. Mix the cornflour with the cold water until smooth, then stir into the milk. Simmer for 3–4 minutes until the sauce thickens, then season with salt and pepper.
  4. Add the fish: Cut the white fish and smoked fish into chunks and add to the sauce with the cooked prawns. Cook gently for 2 minutes, then fold in the broccoli and pour into a 1.5-litre baking dish.
  5. Finish the mash: Drain the potatoes and mash until smooth. Stir in the milk and softened leeks, then season with salt and pepper.
  6. Assemble and bake: Spread the leeky mash over the filling and rough up the top with a fork. Bake at 220°C (200°C Fan / Gas Mark 7) for 35–40 minutes until golden and bubbling.
