How To Make Apple Cake

  1. Prepare the tin and apples: Preheat your oven to 190°C (170°C Fan / Gas Mark 5). Line a 23cm springform cake tin with baking parchment and mist with oil spray. Peel and core the apples, then slice them thinly. Toss the slices in a bowl with the lemon juice and zest.
  2. Mix the dry ingredients: Combine the self-raising flour, baking powder, ground cinnamon, and mixed spice in a large mixing bowl. Give it a good stir so the spices are evenly distributed.
  3. Combine wet ingredients: In a separate bowl, whisk the eggs with 100g of demerara sugar, the milk, and the sunflower oil until smooth.
  4. Bring the batter together: Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold the lemony apple slices through the batter until evenly mixed.
  5. Bake the cake: Pour the batter into the prepared tin. Sprinkle the remaining 2 tbsp of demerara sugar evenly over the top. Bake in the centre of the oven for 1 hour, or until well risen, golden, and a skewer inserted into the centre comes out clean.
  6. Cool and serve: Leave the cake to cool in the tin for 10 minutes before removing it. Dust with sifted icing sugar and serve warm or cold with single cream or half-fat crème fraîche.
